Homemade Queso Dip

My roommates and I have a serious love for queso dip.  Usually we’re too lazy to make it ourselves and just grab a jar at Wegman’s, but here’s an easy recipe for those who want a more authentic Tex-Mex experience.

1 can stewed tomatoes, well drained
1 can green chilies, mild and chopped
1 lb. Velveeta cheese

Cut the cheese into 1-inch cubes.  Place the cheese in a small saucepan and cook over low heat, stirring constantly until the cheese is melted.  Then add the rest of the ingredients.  Serve with tortilla chips.
